When removing the driveshaft, is it ok to just spin the shaft to get all three bolts out. Seemed like a perfectly logical idea but figured I’d ask first?

It is fine, and you have to to get the bolts out. If you have a helper you can make the job easier by putting the transmission in 1st gear, have the helper hold the clutch in until you have the drive shaft positioned, loosen the bolt, and repeat. Start with the bolts on at the differential. If you don’t have a helper you’ll need to use a pry bar diff flange bolts.
try to put paint marks on either side of each connection so you can realign everything when you put it back together.
